Dirty Rice Recipe
Y’all…I seriously love dirty rice!! When my husband and I first got married I would occasionally buy the kind in the box and cook for lunch and at times for supper. However, over the past several years I have tried to steer clear of anything that comes in a box and buy “clean eating type things.” Of course, we try to make sure we eat clean at least 80% of the time and those other times we allow ourselves to eat with in reason.
Anyway…back to dirty rice. About a month ago I was craving dirty rice. I was craving that good ole dirty rice that comes in a box. But, instead of buying it, I searched the internet for a recipe. I found one after Googling (at Plain Chicken)that seemed good. So, I picked up the ingredients at my bi-weekly grocery visit and then made this Dirty Rice Recipe. Let me tell you…it was SOO good and I felt a little better about it because I prepared it at home and did not pull it out of a box.
Oh, and it was made in one pot…and literally took no time. We ate it with a large salad (with thousand island because thousand island goes with dirty rice in my opinion). It was a huge hit!! So, I am making it again tonight and thought today would be a great day to share this great find with you guys.
- 1 lb lean hamburger meat
- 1 lb of pork sausage
- 2 celery stalks, chopped
- 1 green bell pepper, chopped
- 1 onion, chopped
- 2 tbs Tony’s seasoning
- 4 cups chicken broth (I use chicken bouillon cubes and water)
- 2 cups uncooked regular long grain rice
- 1 can of Rotel tomatoes
In a large skillet (this makes a lot – can cut in half easily) cook ground beef, sausage, onion, bell pepper, and celery until the meat is done and veggies are tender. PS – I used 1lb of regular sausage and 1 lb of hot sausage for mine.
You will then drain and add Tony’s seasoning, rice, Rotel and chicken broth or 4 chicken bouillon cubes and 4 cups of water. Bring this to a boil and then reduce heat and let it simmer for about 20 minutes or until the rice is tender.
That is it!!! It is so SIMPLE and so DELICOUS. I like spicy things so adding in the spicy sausage was perfect for us. However, if you are making this for kids…I would stick to regular sausage and regular Rotel. Also, Tony’s seasoning is spicy so you may want to add a little and do a taste test.
If you are like me, there are some nights you just need a quick meal. I love to cook, so I often prepare a huge meal but other times, like tonight, I need something quick and easy and that is NOT out of a box or frozen. My husband and I leave on Thursday (bright and early…leave our house at 3am) for Turks and Caicos and I CANNOT wait. I am always excited each and every time we go. It never gets old. I cannot wait to be lying on Grace Bay Beach .
This will be our first time to go in November so I am anxious to see what the weather will be like. Our friend from the island has informed us that November is the best so we hope he is right. I am so ready for a vacation. My husband and I believe vacations should be a necessity in life. They keep us going and give us something to always look forward to. After all, escaping from everything every now is good for the soul 🙂
