Stuffed Bell Peppers
Stuffed bell peppers is one of my favorite foods. My mom has been making this particular recipe for years. I always seem to make it more when I can pick fresh bell peppers from my garden. Also, it is great to make and have left overs. I cook for two, so I always make four stuff bell peppers. We eat one each for supper and then have two left for lunch the next day. This recipe is super easy and I hope you enjoy as much as we do.
- 4 Bell Peppers
- One pound of Hamburger Meat
- 1-2 Small Cans of Tomato Sauce
- One Onion – Chopped
- 10 oz Bag of Yellow Rice
- Salt and Pepper to Taste
- Shredded Cheddar Cheese
The rice takes the longest to cook, so I always start the rice first. Cook the rice according to the directions on the package.
Then, you will cut the tops off of your bell peppers and clean out the insides. Also, if they are unsteady…you can slice a little of of the bottom to make them even and sit up. Next you will add them to boiling water and boil until soft but not too soft. You want the bell peppers to still stand, but want them done and tender. If they are too soft they will fall apart and you will not be able to stuff them.
While the bell peppers are cooking, you will brown your hamburger meat with one chopped onion. When this is done you will drain and set aside.
When your bell peppers, hamburger meat, and rice is done, you will stuff the peppers. You will layer like this:
- Hamburger Meat
- Sprinkle with Salt and Pepper
- A couple spoonfuls of tomato sauce
- Repeat this x 2.
I always have left over hamburger meat and rice. Layer the hamburger meat with rice in the dish around the bell peppers. Always use a tall dish so that you can do this. Then, when you have used all of your meat and rice (drizzle with tomato sauce), top everything with shredded cheddar cheese. Use the block cheese that you grate yourself – not the prepackaged grated cheese. It just tastes better and cooks better as well.
Now, stick in the oven on 400 degrees until the cheese is melted and bubbly.
I have seen so many different recipes on how to do stuffed bell peppers. This remains my favorite – maybe because it is how my mom has always done it.
